Back in the swing!

So breakfast today was the usual!

Breakfast:
Rice puffs with pears and rice milk

Lunch:
Trying something new, so heres some pics. These took 10 mins to make. Could be even quicker if you pre prepare the picklets. 
First I had some GF picklets u i gusing Laucke white GF mix. Just make them quite thin. 
 I mixed 6 eegs, chopped spring onion, celery, salt and garlic
Line a pie maker with the picklets and pour in the egg mix
FS Gluten free no fuss quiche! 


Verdict?   YUMMO!
Only problem I encountered was...... I didnt make enough!

M.I.A Back on board next week!

Ok, so we went totally frenzy lol!
Things have been super busy so food wise, its been pretty much the same mix of all previous posts.
Except for one small thing....................we went away for the weekend and had a few slips ups. I have been thinking about it, and at first I thought we only slipped up on Gluten, but now I know it was a few other things. So the last 3 days the house has been almost as crazy as pre FS.  
Going to make a big effort to get back posting again next week.

Thursday!

Things have been crazy busy, no time to scratch myself!
Breaky and lunch have been mu
ch the same, but I did come up with a real quick yummy dinner last night. 

Chicken Noodle Soup
Fry up some spring onion and celery and chicken (I used thigh fillets)
Add water (enough to make your soup)
Flavour with garlic, salt, parsley and chives
Make 5-6 Gluten free wraps using the method on the Laucke box
Once the wraps are made, slice them into noodles and add to soup.
Serve with a few cubes of philly cream cheese (box type)
Boys LOVED IT!

Monday again!

Not feeling great today, right arm has gone on strike.

Breakfast:
Not sore how many pieces, but they are through a whole GF loaf! 
Glass of rice milk

School Lunch:
GF wrap made from Laucke GF bread mix from Coles
filled with chicken rissoles and philly cheese and no tomato sauce
1 x pear
1 x piece of GF carob roll cake
celery sticks



After school:
slice pear and glass of milk

Dinner:
Chicken thighs simmers in pear syrup with spring onion
GF pasta fried up with lentils and spring onion
fresh green beans with garlic and butter


Tutoring was running overtime tonight so I left the chicken on low heat for a good 45min to an hour. DS2 has some tummy pains this morning so not sure if this increased the amines. Something Im going to look into.

SUNDAY! Baking day!

Finally a day at home! Almost forgot what that feels like!

So today I baking the GF Carob Roll Cake from Friendly Foods. I have the proper GF self raising flour this time. Im also making the GF wraps from the recipe on the side of the Laucke GF bread mix special white.

Breakfast:
Standard breakfast today of GF toast and rice puffs. 

Morning snack:
 of fresh pears, glass of milk, and 2 GF butter biscuits.


Lunch:
GF wraps! I would have posted a pick of it all finished, only I didnt get a chance! Boys got to them before the camera could! Picture it all wrapped up nice and neat with lettuce, philly cheese and left over chicken rissoles! They were YUMMY!
Might just make them a little thinner next time by making the mixture a little more runny. 


Afternoon Snack:
GF carob roll cake! OMG SO YUMMY!


So, we are almost a week into GF. I dont want to speak too loud, but DS4 has definitely been calmer. We had to go to the Drs yesterday and he sat in the waiting room for over an hour! Quietly!
Hes either getting sick and coming down with something, or this is helping!

Breakfast:
GF toast and bowl of rice puffs

Morning tea:
GF butter buscuits and a glass of rice milk

Lunch:
Rice and Salmon sushi, made fresh at the sushi store, no avocada, no soy sauce!

Afternoon snack:
Red rock chips
Schweppes lemonade
wherthers lollies
(we had a 2 hour car trip so this helped lol)

Dinner:
homemade rissoles   (chicken mince, spring onions, 2 eggs, psyllium husks, garlic, salt, chives and parsley.)
boiled and cubed potatos served with spring onion, garlic and a bit of butter.

Friday!

Well, Im not dying, and I dont have the croup I was expecting. Did the onions work? My pantry is almost bare, been so busy havent had a chance to go shopping. 

Breakfast:
Rice puffs and pear. I know this seems repetative, but seriously, how many kids are eating cocoa pops or fruitloops or nutigrain every morning! 


School lunch:
Fried rice with iceburg lettuce, left over chicken tenders from last night, boiled egg and GF bread toasted.
1 x pear
celery sticks
red rock sea salt chips.

Next week should be a little less crazy so will try doing some baking.



After School Snack:
Running totally low on everything and havent had a chance to get shopping
so the last pack of Red Rock chips was snack.

Dinner:
Spaghetti Bol
Fry up beef mince, spring onions, celery. Add a can of Lentils, they add a heap of No tomato Tomato Sauce
Boiled up gluten free pasta, and use a little philly creme (block type) cheese on top.
This really is just like regular spag bol!

Thursday!

Ok, Im thinking frenzy free may have been wishful thinking! Why is it there never seems to be enough hours in the day!

Breakfast:
GF toast
GF rice puffs with rice milk and tinned pear

School Lunch box:
At the boys request! Same lunch as yesterday. They love it! 
1 x pear
French fry chips
celery sticks

After school snack:
Home made popcorn!
(Super easy to make, just break up some FS rice cakes, pour over melted nutlex and sprinkle with salt. Bake in the over for 5 mins or so to get them crunchy. Tastes just like popcorn.)

Dinner:
Crumbed chicken tenders (crumb with rice flour, egg and crushed rice puffs)
oven baked FS chips
Pureed pear as sauce.

Im so coming down with something. Im going to try the onions in my socks thing tonight. I will know if it works because I have been a chronic asthmatic all my life and I know Im about to get sick with a really croupy cough. My Dr laughs because Im the only adult she knows who gets croup. I can feel i t coming, so if I don't wake up barking like a dog, ill know the onions worked!

Tonight was our third night with our new in home tutor, and she commented on how much calmer DS4 was.
Not sure if its early signs of improvement being GF or just a fluke, but he is definately quieter!

Back on Deck! Breakfast!:
GF rice puffs! Got it right now! with rice milk and a piece of GF toast!
I baked the Laucke GF and it is YUMMY and dead easy to make!

School Lunch Box:
Yesterdays lunch was a great success. 
So today is similar. Chicken fried in rice malt syrup with rice,
boiled egg, lettuce, and GF bread toasted and cut into croutons. 

Celery and green beans for brain food, french fry chips, 2 x rice crackers and 1 x pear.


After School Snack:
Pears with Icecream and left overs from lunch box

Dinner:
FS chicken rissoles purchased from our AMAZING local Butcher who is very well experienced in FS
Stirfried rice noodles with spring onion, celery, no sauce sauce
Piece of GF bread.

Didnt start dinner until 645 tonight as we had really busy arvo! So this dinner was easy as I prepared the noodles earlier. All I had to do was slap it all together and quickly fry the rissoles.

Tuesday! Sick and dont want to do this!

Feel like I've been run over by a truck. So today is a food diary which Im sure everyone will relate to! The I cant be bothered day! I have no GF bread so have to make up a lunch. I could just do gluten but I reluctantly believe that I am already seeing results in just 24 hours. So, lets see what happens with the days intake!

Breakfast:
Definately rice bubbles with tinned pear in syrup and rice/soy milk.

School Lunch box:
So I'm currently boiling eggs and rice, NFI what its going to turn into but it will eventually be lunch! LOL
So I ended up with, chicken fried with spring onion and rice malt syrup mixed with the rice. Served with lettuce and boiled egg.
Celery and Beans for brain food
2 x arrowroot biscuits
1 x pear
Red Rock sea salt chips


After school snack:
We have a busy arvo with extra activities and with not feeling well I wanted something really quick!
Finely chopped (yup you guessed it) spring onion and celery. Mix with lactose free yogurt. This is tolerated only once or twice a week. Other than that we are dairy free!
Serve with Sakata plain crackers. Or in my case today, as I just realised I've run out........ broken up pieces of rice crackers!

And some magic cordial as a treat!


OH AND HERE IS THE REAL LIFE VERSION OF FS TRIALS!
I was just posting on a Facebook group Im part of, and I was advised that rice bubbles are not GF!
And then I realised I also mucked up with the biscuits! 
Oh well, just another small set back. Just continue on!

Dinner:
Crumbed Blue Genedier (crumbed with rice flour, egg and crushed GF rice puffs)
Rice with spring onion and celery (left overs from lunch)
and a slice of gluten free bread.
Had to be a quick one as we have a school meeting tonight!

So if you make a mistake, dont stress! It happens! Just remember we are doing a GREAT job!

Monday!

Breakfast:
Rice bubbles with tinned pears and rice milk.


School lunch box:
Fresh green beans & celery for brain food
1 pear
Sakata plain rice crackers
Piece of left over gf carob roll cake
Stir fried rice, chicken,  red cabbage & celery with salt garlic and chives.




After school snack:
Fs pop corn (recipe coming soon)
Glass of rice/soy milk.

Dinner:
Ok, so i was totally frazzled! lol! Not bad for frenzy free FS! Gluten free is freaking me out!
Dinner ended up being the following.
I blended a can of lentils and a can of kidney beans, added some garlic, salt and chives and simmered for a while lol (dont ask how long i lost track) This basically made a gravy. Fried up some chicken, spring onion, celery. Boiled some peeled and cubed potato. Fried the whole lot up and added the gravy mix. It was just like a casserole/curry. Boiled some rice noodles. served it up with the rice noodles as the bed and the casserole on top. Boys loved it!

Mothers Day!

Of course I would have to choose Mothers Day to start blogging the daily eatings of the house. Oh well, as I said, the aim of this is to show how FS works in everyday real life! As of tomorrow we will be going gluten free for a 2 week trail, but for today, its low Sals, low amine, small amount of dairy .

Breakfast:  
Semolina with rice milk   (Oh im going to miss this, the boys love it)

Morning tea:
1 Scotch finger biscuit
1 arrow root biscuit
1 glass rice milk

Lunch:
Toasted FS bread roll with nutlex, fresh cooked chicken and spring onions, spread with

Afternoon tea:
Gluten free carob roll from Friendly Foods cookbook

Dinner: 
Cubed boiled potatoes with spring onion, garlic, chives. Bbq lamb chops Pretty sure the boys all had a pear each somewhere in there too!

WHY BLOG?

So, after spending a fair bit of time on many sites and blogs, I've decided to start my own Blog. We have been failsafers now for about 4 months, and it is changing our lives! The biggest thing I've found is the initial hurdle and fear of how hard it is, to actually get started! So, I've decided to blog a daily entry of our food intake. I'm also hoping this will encourage me to get more creative as people will be watching. So it may take on a structured look, or it may just be totally random. (I'm guessing a lot of totally random as we have a crazy busy house and time as limited). I'm hoping this blog will help those who read the books but feel like its just too hard. I'm hoping that this will allow other parents to see that it really isnt that hard and it can have amazing benefits.
